Ingredients
1.5 lbs boneless skinless chicken breasts, sliced into cutlets
5.2 oz package Garlic & Fine Herbs Boursin Cheese
1 tablespoon olive oil
1/2 cup chicken broth
1/4 cup heavy cream
2 cups fresh baby spinach (optional)
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Season the chicken cutlets on both sides with salt and black pepper.
Step 2: Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and sear for 5-6 minutes per side until golden brown and cooked through.
Step 3: Remove the chicken from the skillet and set aside on a plate.
Step 4: Reduce heat to medium. Pour the chicken broth into the skillet, scraping the bottom to release the browned bits.
Step 5: Add the Boursin cheese and heavy cream to the skillet. Whisk continuously until the cheese is melted and the sauce is smooth.
Step 6: If using, stir in the baby spinach and cook for 1 minute until wilted.
Step 7: Return the chicken to the skillet, spooning the sauce over the meat. Simmer for 1-2 minutes until heated through.
Step 8: Garnish with fresh parsley and serve immediately.
Notes
If the sauce is too thick, add an extra tablespoon of chicken broth. For a deeper flavor, deglaze the pan with a splash of dry white wine before adding the broth.
