Ingredients
1.5 lbs chicken breasts, pounded to even thickness
1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
1/2 cup chicken broth or dry white wine
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley for garnish
1/2 lemon, juiced
Instructions
Step 1: Season the chicken breasts on both sides with salt and black pepper.
Step 2: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Step 3: Add the chicken to the skillet and sear for 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
Step 4: In the same skillet, melt the remaining tablespoon of butter and add minced garlic. Cook for 1 minute until fragrant.
Step 5: Deglaze the pan with chicken broth or wine, scraping the bottom to release the browned bits. Let the liquid simmer for 2 minutes.
Step 6: Add the Boursin cheese to the pan and stir constantly until it has melted into a smooth, creamy sauce.
Step 7: Return the chicken to the skillet and spoon the sauce over it. Simmer for an additional 2-3 minutes.
Step 8: Finish with fresh lemon juice and garnish with chopped parsley before serving.
Notes
For an extra kick, add a pinch of red pepper flakes to the sauce. If the sauce is too thick, thin it with a tablespoon of water or milk.
