Ingredients
12 mini pancakes or waffles
6 slices of thick-cut bacon, cooked
3 hard-boiled eggs, halved
1 cup fresh strawberries, sliced
1/2 cup fresh blueberries
1 large banana, sliced
1/2 cup Greek yogurt
1/4 cup maple syrup
1/4 cup almond butter or peanut butter
1/4 cup granola
Fresh mint for garnish
Instructions
Step 1: Select a large wooden board or platter and place two or three small ramekins on it to hold the yogurt, maple syrup, and nut butter.
Step 2: Cook your pancakes, waffles, and bacon. Allow them to rest for a minute so they aren’t steaming hot when placed on the breakfast board.
Step 3: Arrange the pancakes or waffles in a central ‘S’ curve across the board to create a visual focal point.
Step 4: Place the bacon strips and halved hard-boiled eggs in the larger open spaces around the carbohydrates.
Step 5: Fill the remaining gaps with clusters of strawberries, blueberries, and banana slices, ensuring colors are distributed evenly across the breakfast board.
Step 6: Sprinkle granola over the yogurt ramekin and garnish the entire breakfast board with fresh mint leaves for a pop of green.
Step 7: Serve immediately while the warm items are still at temperature and enjoy the communal dining experience!
