Ingredients
1 cup quick-cook black tapioca pearls
8 cups water (for boiling)
1/2 cup dark brown sugar (or muscovado)
1/4 cup water (for syrup)
2 cups whole milk or oat milk
1 cup ice cubes
Instructions
Step 1: Bring 8 cups of water to a rolling boil in a large pot. Add the tapioca pearls and stir gently to prevent sticking.
Step 2: Boil the pearls for 20 minutes over medium heat. Turn off the heat, cover the pot, and let the pearls rest for another 20 minutes.
Step 3: In a small saucepan, combine the dark brown sugar and 1/4 cup water. Simmer over medium-low heat for 5-8 minutes until it thickens into a syrup.
Step 4: Drain the cooked pearls and add them to the brown sugar syrup. Simmer for an additional 5 minutes until the pearls are glossy and the syrup is very thick.
Step 5: To assemble, spoon the pearls and syrup into two glasses, swirling the syrup around the sides. Add ice and pour in the cold milk. Serve immediately with a wide straw.
Notes
Always use fresh pearls; once cooked, they lose their texture if refrigerated. For a deeper flavor, use Muscovado sugar.
