1.5 lbs Brussels sprouts, trimmed and halved
4 slices thick-cut bacon, diced
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons balsamic vinegar
1 tablespoon honey
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, toss the halved Brussels sprouts and diced bacon with olive oil, salt, and pepper until evenly coated.
Step 3: Spread the mixture onto the prepared baking sheet in a single layer, ensuring as many sprouts as possible are cut-side down.
Step 4: Roast for 20 minutes, tossing halfway through to ensure even browning and crispiness.
Step 5: Drizzle the balsamic vinegar and honey over the sprouts and toss well to coat. Return to the oven for another 5 minutes until the glaze is bubbly and thick.
Step 6: Serve immediately while hot and crispy.
Notes
For extra crunch, add toasted walnuts or pecans after roasting.
