Fiery Buldak Chicken (Korean Fire Chicken)

An irresistible homemade buldak recipe featuring tender chicken thighs tossed in a rich, spicy, and savory Korean fire chicken sauce, topped with gooey melted mozzarella cheese. Get ready for a delicious kick!

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1.5 lbs (about 680g) boneless, skinless chicken thighs, cut into 1-inch cubes
1 tbsp cooking oil (vegetable or canola)
1.5 cups shredded mozzarella cheese
2–3 green onions, chopped, for garnish
1 tsp toasted sesame seeds, for garnish
For the Buldak Sauce:
3 tbsp gochujang (Korean chili paste)
2 tbsp gochugaru (Korean chili powder, adjust to taste for spice)
2 tbsp soy sauce
1 tbsp sugar
1 tbsp mirin (rice cooking wine)
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 tbsp sesame oil
2 tbsp water

Instructions

Step 1: Pat chicken thighs dry and cut into 1-inch cubes. Place in a medium bowl.
Step 2: In a small bowl, whisk together all buldak sauce ingredients: gochujang, gochugaru, soy sauce, sugar, mirin, minced garlic, grated ginger, sesame oil, and water.
Step 3: Pour the buldak sauce over the chicken, ensuring all pieces are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
Step 4: Preheat your oven to 400°F (200°C). Prepare an oven-safe skillet (like cast iron) or a baking dish.
Step 5: Heat 1 tablespoon of cooking oil in the oven-safe skillet over medium-high heat on the stovetop. Add the marinated chicken in a single layer, searing for 3-4 minutes per side until browned and slightly charred. Work in batches if necessary to avoid overcrowding.
Step 6: Reduce heat to medium-low, cover the skillet, and cook for another 8-10 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened. If not using an oven-safe skillet, transfer chicken to a baking dish now.
Step 7: Spread the cooked chicken evenly in the skillet or baking dish. Sprinkle the 1.5 cups of shredded mozzarella cheese generously over the top.
Step 8: Transfer the skillet or baking dish to the preheated oven. Bake for 10-15 minutes, or until the cheese is completely melted, bubbly, and slightly golden.
Step 9: Carefully remove from the oven. Garnish with chopped green onions and toasted sesame seeds. Serve hot and enjoy your delicious buldak recipe!

Notes

For an even deeper flavor, marinate the chicken overnight. Adjust gochugaru to control the spice level. Serve with rice, kimchi, or pickled radish to balance the heat. This buldak recipe is truly a crowd-pleaser for spice lovers!
