Ingredients
1 pound (450g) short pasta (such as orecchiette, fusilli, or penne)
2 pints (about 4 cups) cherry or grape tomatoes, halved
8 ounces (225g) fresh mozzarella (bocconcini or ciliegine), halved or quartered
1/2 cup fresh basil leaves, roughly chopped
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional, for a kick)
1/4 cup extra virgin olive oil, plus more for drizzling
Salt and freshly ground black pepper to taste
Parmesan cheese, for serving (optional)
Instructions
Step 1: Cook the Pasta. Bring a large pot of heavily salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Reserve 1 cup of the starchy pasta water before draining the pasta.
Step 2: Prepare the Sauce Base. While the pasta cooks, combine the halved cherry tomatoes, fresh mozzarella, minced garlic, red pepper flakes (if using), and 1/4 cup of extra virgin olive oil in a large serving bowl. Season generously with salt and black pepper.
Step 3: Combine Pasta and Sauce. Drain the cooked pasta and immediately add the hot pasta to the serving bowl with the tomato and mozzarella mixture. The heat from the pasta will gently warm the other ingredients.
Step 4: Toss and Emulsify. Add the roughly chopped fresh basil to the bowl. Toss everything together vigorously for 1-2 minutes. As you toss, the tomatoes will begin to burst, releasing their juices, and the mozzarella will soften. If the sauce seems a little dry, add a tablespoon or two of the reserved pasta water, tossing until a light, creamy sauce forms.
Step 5: Adjust Seasoning and Serve. Taste the pasta and adjust seasoning as needed (more salt, pepper, or red pepper flakes). Drizzle with a little extra olive oil if desired. Serve immediately, perhaps with a sprinkle of fresh Parmesan cheese.
Notes
For the best results, use peak-season cherry tomatoes – their natural sweetness makes a huge difference. Don’t be shy with the fresh basil; it truly elevates the dish. This pasta is best enjoyed immediately, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
