Ingredients
2 1/2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon granulated sugar
2 teaspoons salt
2 cups cold buttermilk
1/2 cup (1 stick) salted butter, melted
Instructions
Step 1: Preheat your oven to 450°F (232°C).
Step 2: Melt the stick of butter and pour it into an 8×8-inch glass baking dish, ensuring the bottom is completely covered.
Step 3: In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
Step 4: Pour the cold buttermilk into the dry ingredients and stir with a spatula just until a moist dough forms. Do not overmix.
Step 5: Place the dough into the baking dish on top of the melted butter. Spread it gently to the edges using a spatula.
Step 6: Use a knife or bench scraper to cut the dough into a 3×3 grid (9 squares) before placing it in the oven.
Step 7: Bake for 20-25 minutes, or until the tops are golden brown and the butter has been mostly absorbed. Let rest for 5 minutes before serving.
Notes
Ensure your buttermilk is very cold to help with the rise. If using unsalted butter, add an extra 1/4 tsp of salt to the dough.
