Ingredients
6 slices thick-cut bacon, cut into 1/2-inch pieces
1 large onion, thinly sliced
1 head green cabbage (about 2 lbs), cored and thinly sliced or chopped
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
1/2 cup chicken broth (or vegetable broth)
2 tablespoons apple cider vinegar
Instructions
Step 1: In a large, heavy-bottomed pot or Dutch oven, cook the bacon pieces over medium heat until crispy. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate, leaving the rendered bacon fat in the pot.
Step 2: Add the thinly sliced onion to the pot with the bacon fat. Sauté over medium heat for 8-10 minutes, stirring occasionally, until softened and translucent, or slightly golden brown for more flavor.
Step 3: Add the sliced cabbage to the pot. Stir into the onions and bacon fat. Cook for 5-7 minutes, stirring frequently, until the cabbage begins to wilt. Season with salt and black pepper.
Step 4: Pour in the chicken broth and apple cider vinegar. Bring the mixture to a simmer.
Step 5: Reduce the heat to low, cover the pot, and let the cabbage braise for 20-25 minutes, or until it is very tender. Stir occasionally to ensure even cooking.
Step 6: Stir in the reserved crispy bacon. Taste and adjust seasonings as needed before serving warm.
Notes
For best results, use a good quality thick-cut bacon. If you don’t have chicken broth, vegetable broth works well. Leftovers store beautifully in an airtight container for up to 3-4 days in the refrigerator.
