1 large head of green cabbage, chopped
2 large onions, diced
1 bunch of celery, sliced
3 large carrots, sliced into rounds
2 green bell peppers, chopped
1 lb green beans, trimmed and halved
2 cans (14.5 oz) diced tomatoes
8 cups low-sodium vegetable broth
4 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare all vegetables by washing, peeling, and chopping them into uniform, bite-sized pieces to ensure even cooking.
Step 2: In a very large pot, sauté the onions, celery, and bell peppers with a splash of broth or water over medium heat for 5-7 minutes until they begin to soften.
Step 3: Add the minced garlic, oregano, basil, and red pepper flakes, stirring constantly for 1 minute until the spices become fragrant.
Step 4: Stir in the chopped cabbage, carrots, and green beans, tossing them with the aromatic vegetables to coat.
Step 5: Pour in the diced tomatoes (including the juice) and the vegetable broth. Ensure the liquid covers all the vegetables; add a bit of water if necessary.
Step 6: Bring the pot to a rolling boil, then reduce the heat to low. Cover partially and simmer for 30 to 45 minutes, or until all vegetables are tender.
Step 7: Season with salt and black pepper to taste. Ladle into bowls and garnish with fresh parsley before serving.
Notes
For the best results, use low-sodium broth to avoid bloating. This soup freezes exceptionally well for up to 3 months.
