Ingredients
2 tbsp olive oil
1 large yellow onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
1 medium head green cabbage (about 2 lbs), cored and chopped
1 (28 oz) can diced tomatoes, undrained
2 tbsp tomato paste
6 cups vegetable broth (low sodium preferred)
1 bay leaf
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp red pepper flakes (optional, for a little heat)
Salt and freshly ground black pepper to taste
Fresh parsley, chopped, for garnish (optional)
Instructions
Step 1: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are softened and the onion is translucent.
Step 2: Add the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic.
Step 3: Stir in the diced cabbage, diced tomatoes (undrained), tomato paste, vegetable broth, bay leaf, dried oregano, dried thyme, and red pepper flakes (if using). Season generously with salt and black pepper.
Step 4: Bring the cabbage soup recipe to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes, or until the cabbage is tender.
Step 5: Remove the bay leaf before serving. Taste and adjust seasonings as needed. If you desire a slightly thicker soup, you can mash a portion of the soup with a potato masher against the side of the pot.
