Ingredients
1 tablespoon vegetable oil (or peanut oil)
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 medium head green cabbage (about 2 lbs), cored and thinly sliced
1/2 red bell pepper, thinly sliced (optional)
2 tablespoons low-sodium soy sauce (or Tamari for gluten-free)
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon sugar (or maple syrup)
1 teaspoon cornstarch
Optional: 1/2 teaspoon red pepper flakes for heat
Optional: Cooked protein (chicken, shrimp, tofu) for a complete meal
Optional: Toasted sesame seeds for garnish
Instructions
Step 1: Prepare the sauce. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, and cornstarch. If using, add red pepper flakes. Set aside.
Step 2: Heat the oil. Heat a large wok or a heavy-bottomed skillet over medium-high to high heat. Add the vegetable oil and swirl to coat the pan.
Step 3: Sauté aromatics. Add the minced garlic and grated ginger to the hot oil. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.
Step 4: Stir-fry cabbage and optional bell pepper. Add the thinly sliced cabbage (and red bell pepper, if using) to the wok. Stir-fry for 5-7 minutes, tossing frequently, until the cabbage is tender-crisp and slightly softened but still has a bite.
Step 5: Add protein (if using). If you’re adding cooked protein (like pre-cooked chicken or shrimp), add it now and toss for 1-2 minutes to heat through.
Step 6: Finish with sauce. Give the prepared sauce another quick whisk, then pour it over the cabbage and other ingredients in the wok. Toss continuously for 1-2 minutes until the sauce has thickened and evenly coated all the ingredients.
Step 7: Serve. Remove the cabbage stir fry from the heat immediately. Garnish with toasted sesame seeds, if desired, and serve hot over rice or noodles.
Notes
For best results, make sure your wok or pan is very hot before adding ingredients to get a proper stir-fry rather than steaming. Don’t overcrowd the pan; cook in batches if necessary. Adjust the sugar and soy sauce to your taste preferences. This dish is fantastic on its own or as a side.
