2 oz (60ml) cachaça

Step 1: Wash your lime thoroughly. Cut off both ends of the lime. Then, cut the lime in half lengthwise. Remove the white pithy core that runs down the center – this helps prevent bitterness. Cut each lime half into 3-4 wedges.
Step 2: Place the lime wedges (typically 4-6 wedges for one drink) into a sturdy old-fashioned glass or a rocks glass. Add 1-2 tablespoons of granulated sugar over the limes. Adjust to your sweetness preference; start with less, you can always add more.
Step 3: Using a muddler, gently but firmly press and twist the limes and sugar together. The goal is to extract the juice and essential oils from the lime rinds without completely pulverizing the pith, which can make the drink bitter. Muddle for about 30-60 seconds, until you see a good amount of juice and the sugar is mostly dissolved.
Step 4: Fill the glass generously with crushed ice or small ice cubes. Crushed ice melts faster and helps dilute the drink, but regular cubes work fine.
Step 5: Pour 2 ounces (60ml) of cachaça over the muddled limes and ice.
