The Ultimate Cajun Seafood Boil

A vibrant and flavorful Cajun seafood boil recipe, packed with shrimp, crab, mussels, corn, and potatoes, all cooked in a rich, spicy broth. Perfect for a memorable feast with friends and family.

  • Total Time: 70 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

1 gallon (16 cups) chicken broth or seafood stock
1 cup unsalted butter
1 large yellow onion, chopped
8 cloves garlic, minced
2 lemons, halved
4 bay leaves
1/2 cup Cajun seasoning (adjust to taste)
1/4 cup Old Bay seasoning
2 tablespoons smoked paprika
1 tablespoon cayenne pepper (more or less to taste)
1 teaspoon black pepper
1 tablespoon salt (or to taste)
2 lbs baby red potatoes, halved or quartered
4 ears of corn, shucked and cut into 2-inch pieces
1 lb smoked sausage (andouille or kielbasa), sliced into 1-inch pieces
2 lbs snow crab clusters or Dungeness crab legs, thawed if frozen
2 lbs large shrimp, peeled and deveined (tail on or off, your preference)
1 lb mussels or clams, scrubbed and de-bearded
Fresh parsley, chopped, for garnish
Extra lemon wedges, for serving

Instructions

Step 1: Prepare Your Aromatics. In a very large stockpot (at least 20-quart), melt the butter over medium heat. Add the minced garlic and chopped onion. Sauté until fragrant and softened, about 5-7 minutes.
Step 2: Build the Broth. Pour in the chicken broth and add the lemon halves, bay leaves, Cajun seasoning, Old Bay seasoning, paprika, cayenne pepper, black pepper, and salt. Bring to a rolling boil over high heat, then reduce heat to medium-low, cover, and simmer for at least 15-20 minutes to allow the flavors to meld.
Step 3: Cook the Potatoes. Increase the heat back to high. Add the baby potatoes to the boiling seasoned broth. Cook for about 10-15 minutes, or until they are just tender when pierced with a fork.
Step 4: Add the Corn and Sausage. Next, add the corn on the cob pieces and the sliced smoked sausage to the pot. Continue to boil for another 5-7 minutes.
Step 5: Cook the Crab. If using crab legs, add them to the pot and cook for 5-7 minutes.
Step 6: Add the Shrimp and Mussels/Clams. Add the shrimp and mussels/clams to the pot. Cook for only 3-5 minutes, or until the shrimp are pink and opaque, and the mussels/clams have opened. Discard any mussels or clams that do not open.
Step 7: Serve Your Feast. Carefully drain the cooking liquid. Transfer all the contents of the pot onto a large, newspaper-covered table or a large platter. Garnish with fresh parsley and extra lemon wedges. Serve immediately with Basics Glass Food Storage containers ready for leftovers, though there rarely are any!

Notes

For best flavor, let the broth simmer for at least 20 minutes before adding vegetables and seafood. Adjust the cayenne pepper to your preferred spice level. Serve with plenty of napkins and perhaps a side of crusty bread to soak up the delicious juices.
