Ingredients
1 lb Ribeye steak (1.5 inches thick)
3 medium Yukon Gold potatoes, diced into 1/2 inch cubes
2 tbsp Avocado oil or vegetable oil
3 tbsp Unsalted butter
3 cloves Garlic, smashed
2 sprigs Fresh rosemary
2 sprigs Fresh thyme
1 tsp Garlic powder
Kosher salt and black pepper to taste
Instructions
Step 1: Prepare your campfire or grill to medium-high heat. Allow the wood to burn down until you have a consistent bed of hot coals.
Step 2: Place a large cast-iron skillet on the grill grate and add the oil. Once shimmering, add the diced potatoes.
Step 3: Season potatoes with salt, pepper, and garlic powder. Cook for 12-15 minutes, stirring occasionally, until they are golden and tender. Move them to the edges of the pan.
Step 4: Season the steak generously with salt and pepper on all sides. Place the steak in the center of the hot skillet.
Step 5: Sear the steak for 4-5 minutes per side for medium-rare. In the last 2 minutes, add the butter, smashed garlic, and fresh herbs to the pan.
Step 6: Tilt the pan slightly and spoon the melting herb butter over the steak repeatedly (basting).
Step 7: Remove the steak from the skillet and let it rest on a cutting board or plate for 5-10 minutes before slicing.
Step 8: Serve the sliced steak alongside the crispy potatoes and enjoy immediately.
Notes
Ensure the steak is at room temperature before cooking for the most even sear. Use high-quality charcoal or hardwood for the best flavor.
