Ingredients
2 lbs fresh carrots, peeled and sliced into 1/4-inch rounds
1/4 cup unsalted butter
1/2 cup packed light brown sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup water
Fresh parsley for garnish (optional)
Instructions
Step 1: Place the sliced carrots, water, and salt in a large skillet over medium-high heat. Cover and bring to a simmer.
Step 2: Cook for about 5-7 minutes, or until the carrots are just fork-tender. If any excess water remains, drain it out, leaving about a tablespoon in the pan.
Step 3: Reduce the heat to medium and add the butter and brown sugar to the skillet with the carrots.
Step 4: Stir constantly for 3-5 minutes as the butter and sugar melt together to form a bubbling glaze.
Step 5: Continue to cook, stirring gently, until the glaze has thickened and coats the carrots thoroughly. Season with black pepper.
Step 6: Remove from heat and transfer to a serving dish. Garnish with fresh parsley if desired and serve the candied carrots recipe immediately while warm.
Notes
For an extra layer of flavor, substitute half of the brown sugar with maple syrup. Always use fresh carrots rather than frozen for the best texture.
