Instructions

Step 1: Preheat your oven to 350°F (175°C). Generously grease and flour a 10-inch bundt pan, ensuring every detail of the pan is covered to prevent sticking.
Step 2: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
Step 3: In a large mixing bowl, beat the vegetable oil and granulated sugar together until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The batter will be quite thick.
Step 5: Gently fold in the diced apples using a spatula until they are evenly distributed throughout the batter.
Step 6: Spoon the batter into the prepared bundt pan and smooth the top. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Allow the cake to cool in the pan for 10 minutes, then carefully invert it onto a wire rack to cool completely.
Step 8: To make the glaze: In a small saucepan, combine butter, brown sugar, heavy cream, and salt. Bring to a boil over medium heat, stirring constantly. Let it boil for 1-2 minutes until thickened, then remove from heat.
Step 9: Let the glaze cool for 5 minutes, then drizzle it generously over the cooled caramel apple bundt cake before serving.

Notes

Ensure the eggs are at room temperature for a better emulsion in the batter. If the glaze becomes too thick, add a teaspoon of cream to thin it out.
