Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup light brown sugar, packed
3 large eggs, room temperature
1 teaspoon vanilla extract
3 cups Granny Smith apples, peeled and chopped
1/2 cup heavy cream (for glaze)
1/2 cup brown sugar (for glaze)
1/4 cup unsalted butter (for glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking pan or a bundt pan.
Step 2: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg until well combined.
Step 3: In a large mixing bowl, cream together the 1 cup of softened butter, granulated sugar, and 1 cup of brown sugar until the mixture is light and fluffy.
Step 4: Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped apples by hand.
Step 6: Pour the batter into the prepared pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: While the cake cools slightly, combine the glaze ingredients (cream, 1/2 cup brown sugar, 1/4 cup butter) in a small saucepan over medium heat. Bring to a boil for 2 minutes, then pour over the warm cake.
Notes
Use firm apples for the best texture. If using a bundt pan, ensure it is very well-greased and floured.
