Ingredients
6 cups rice cereal
10 oz marshmallows
1/2 cup unsalted butter (divided)
1 cup brown sugar
1/2 cup sweetened condensed milk
2 cups semi-sweet chocolate chips
1 tbsp coconut oil
1/4 tsp sea salt
Instructions
Step 1: Line a 9×9 inch square baking pan with parchment paper and lightly grease the sides.
Step 2: In a large pot, melt 1/4 cup of butter over low heat. Add the marshmallows and stir until completely smooth.
Step 3: Remove from heat and stir in the rice cereal until evenly coated. Press gently into the prepared pan.
Step 4: In a small saucepan, combine the remaining 1/4 cup butter, brown sugar, and sweetened condensed milk. Bring to a boil, then simmer for 2-3 minutes until thickened.
Step 5: Pour the caramel mixture over the rice cereal base and spread evenly. Let it cool for 10 minutes.
Step 6: Melt the chocolate chips and coconut oil in the microwave in 30-second intervals until smooth. Pour over the caramel layer.
Step 7: Sprinkle with sea salt and refrigerate for at least 30 minutes before slicing into squares.
Notes
For best results, use fresh marshmallows and do not over-compress the cereal base.
