2 tablespoons olive oil
2 large yellow onions, thinly sliced
1 tablespoon balsamic vinegar (optional, for deeper caramelization)
1 tablespoon butter
8 ounces cremini mushrooms, sliced
1 clove garlic, minced

1 sheet frozen puff pastry, thawed
1 cup shredded Gruyère cheese
1/2 cup shredded mozzarella cheese
1 large egg, beaten (for egg wash)

Instructions
Step 1: Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-low heat. Add the thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 30-45 minutes, or until the onions are deeply golden brown and very soft.
