Ingredients
1.5 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1.5 tsp ground cardamom (preferably freshly ground)
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup Medjool dates, pitted and finely chopped
1/2 cup boiling water (to soak dates)
1/2 cup shelled pistachios, roughly chopped
Instructions
Step 1: Preheat your oven to 325°F (160°C). Grease and line a 9×5 inch loaf pan with parchment paper.
Step 2: In a small bowl, combine the chopped dates and boiling water. Let them sit for 10 minutes, then mash slightly with a fork to form a chunky paste.
Step 3: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cardamom, and salt.
Step 4: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
Step 5: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 6: Gently fold in the date mixture (including any remaining liquid) into the wet ingredients.
Step 7: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix.
Step 8: Fold in 3/4 of the chopped pistachios, reserving the rest for the topping.
Step 9: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the remaining pistachios over the surface.
Step 10: Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Ensure the butter is truly at room temperature for the best creamed consistency. If the top browns too quickly, tent with foil during the last 15 minutes of baking.
