Carrot Cake Whoopie Pies

Soft, spiced carrot cake cookies sandwiched with a velvety cream cheese frosting.

2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1 large egg, room temperature
1 tsp vanilla extract
1 1/2 cups finely grated fresh carrots
8 oz cream cheese, softened
1/4 cup unsalted butter, softened (for filling)
2 cups powdered sugar
1 tsp vanilla extract (for filling)

Instructions

Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined.
Step 3: In a large bowl using a hand mixer or stand mixer, cream together 1/2 cup softened butter, brown sugar, and granulated sugar until light and fluffy.
Step 4: Beat in the egg and vanilla extract until smooth, then stir in the finely grated carrots by hand.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Step 6: Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheets, spaced 2 inches apart.
Step 7: Bake for 10-12 minutes or until the edges are set and the centers spring back when lightly touched.
Step 8: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Step 9: For the filling, beat the cream cheese and 1/4 cup butter together until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
Step 10: Once the cookies are cold, pipe or spoon a generous amount of frosting onto the flat side of half the cookies. Top with the remaining cookies to create sandwiches.

Notes

Ensure the cookies are completely cool before filling, otherwise the cream cheese frosting will melt and slide off.
