Ingredients
2 cups all-purpose flour

0.5 teaspoon salt
1 cup vegetable oil
1 cup granulated sugar
0.5 cup brown sugar
3 large eggs
2 cups grated carrots
1 cup raisins
0.5 cup unsalted butter (for sauce)
0.5 cup molasses (for sauce)
1 tablespoon fresh grated ginger (for sauce)
0.25 cup heavy cream (for sauce)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Step 3: In a large bowl, beat the eggs with the granulated and brown sugars until thickened.
Step 4: Gradually add the oil to the egg mixture, whisking constantly until well combined.
Step 5: Fold in the grated carrots and raisins until evenly distributed.
Step 6: Add the dry ingredients to the wet ingredients and stir until just combined; do not overmix.
Step 7: Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick comes out clean.
Step 8: While the cake bakes, combine butter, molasses, and ginger in a small saucepan over medium heat.
Step 9: Bring the sauce to a simmer for 5 minutes, then stir in the heavy cream and remove from heat.
Step 10: Allow the cake to cool slightly before slicing and drizzling generously with the warm ginger molasses sauce.
Notes
Use freshly grated carrots for the best moisture levels. Dark molasses can be used for a deeper, more bitter-sweet flavor.
