Ingredients
1 cup unsalted butter, melted
2 cups granulated sugar
1/2 cup light brown sugar, packed
4 large eggs, room temperature
1 tablespoon vanilla extract
3/4 cup Dutch-process cocoa powder
1 cup all-purpose flour
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground black pepper
1 cup semi-sweet chocolate chips
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined and slightly pale.
Step 3: Add the eggs one at a time, whisking thoroughly after each addition, then stir in the vanilla extract until the mixture is glossy.
Step 4: Sift in the cocoa powder, flour, salt, cinnamon, cardamom, ginger, cloves, and black pepper. Fold gently with a spatula until just combined.
Step 5: Fold in the chocolate chips, then pour the batter into the prepared baking pan and smooth the top with a spatula.
Step 6: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow to cool completely in the pan before slicing.
Notes
For the best results, do not overbake. The brownies will continue to firm up as they cool.
