Instructions
Step 1: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Step 2: In a separate medium bowl, whisk together 2 cups of buttermilk, eggs, and melted butter until well combined.
Step 3: Pour the wet ingredients into the dry ingredients. Mix gently with a whisk or spatula until just combined. Don’t overmix; a few lumps are fine. Fold in 1 cup of shredded sharp cheddar cheese for the batter.
Step 4: In another bowl, combine the shredded chicken, softened cream cheese, 1/4 cup buttermilk, garlic powder, onion powder, black pepper, and chopped chives. Mix until well combined and creamy. Stir in 1/2 cup of shredded sharp cheddar cheese for the filling.
Step 5: Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease with cooking spray or butter.
Step 6: Pour about 1/3 cup of waffle batter onto the center of the hot waffle iron. Spoon approximately 2-3 tablespoons of the chicken filling over the batter, spreading it slightly but leaving a small border.
Step 7: Pour another 1/4 cup of waffle batter over the chicken filling, ensuring it covers the filling completely.
Step 8: Close the waffle iron and cook for 4-6 minutes, or until the waffle is golden brown and crispy and the chicken filling is heated through. Cooking time may vary depending on your waffle iron.
Step 9: Carefully remove the cooked waffle and place it on a wire rack to prevent it from getting soggy. Repeat with the remaining batter and filling.
