16 oz cream cheese, softened
1/2 cup 100% pure pumpkin puree (not pie filling)
2 cups sharp cheddar cheese, freshly shredded
2 cloves garlic, minced
1/2 tsp onion powder
1/2 tsp smoked paprika
Pinch of cayenne pepper (optional)
1/2 tsp salt, or to taste
1/4 tsp black pepper, or to taste
1 cup chopped pecans, toasted
Instructions
Step 1: In a large mixing bowl, combine the softened cream cheese, pumpkin puree, shredded sharp cheddar cheese, minced garlic, onion powder, smoked paprika, a pinch of cayenne pepper (if using), and a good amount of salt and black pepper. Using an electric mixer on medium speed, beat until all ingredients are well combined and the mixture is smooth and creamy. Scrape down the sides of the bowl as needed to ensure everything is incorporated evenly.
Step 2: Once the mixture is uniform, use a spatula to gather it into a ball shape. Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 2 hours, or preferably overnight. Chilling is essential as it allows the flavors to meld beautifully and the cheese ball to firm up, making it easier to handle and serve.
Step 3: While the cheese ball is chilling, prepare your pecan topping. Spread the chopped pecans evenly on a baking sheet. Toast in a preheated oven at 350°F (175°C) for 5-7 minutes, or until fragrant and lightly golden. Keep a close eye on them to prevent burning. Let them cool completely before proceeding.
Step 4: Once the cheese ball is firm, unwrap it and place it on a serving plate. Gently press the toasted chopped pecans all over the exterior of the cheese ball, covering it completely. You can also mix in some fresh finely chopped parsley for a pop of green color and fresh flavor.
Step 5: Serve your beautiful cheddar pumpkin cheese ball immediately with an assortment of crackers, pretzel crisps, apple slices, or pear slices. For any leftovers, store them in an airtight container in the refrigerator for up to 5 days.
