Ingredients
1 lb Extra-Sharp Cheddar Cheese, hand-grated
1 cup (2 sticks) Unsalted Butter, softened
2.5 cups All-Purpose Flour
1.5 tsp Salt
0.5 tsp Cayenne Pepper
0.25 tsp Garlic Powder (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats.
Step 2: In a large bowl or stand mixer fitted with the paddle attachment, cream together the softened butter and hand-grated cheddar cheese until smooth and well combined.
Step 3: In a separate medium bowl, whisk together the all-purpose flour, salt, cayenne pepper, and garlic powder.
Step 4: Gradually add the dry flour mixture to the cheese and butter mixture. Mix on low speed until the dough just comes together. Do not over-mix.
Step 5: Load the dough into a cookie press fitted with a star-shaped disc. Press the dough out into 3-inch long strips onto the prepared baking sheets, leaving about an inch of space between each.
Step 6: Bake for 12-15 minutes, or until the ends are lightly browned and the straws are firm to the touch.
Step 7: Remove from the oven and allow the cheese straws to cool completely on the baking sheet. They will crisp up further as they cool.
Step 8: Store in an airtight container at room temperature for up to two weeks.
Notes
Always grate your own cheese from a block. Pre-shredded cheese contains cornstarch which prevents the straws from having the correct texture.
