1.5 lbs fresh broccoli florets
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1.5 cups whole milk
2 cups sharp cheddar cheese, freshly grated
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg
Instructions
Step 1: Prepare the broccoli by cutting it into uniform florets. Place them in a steamer basket over boiling water.
Step 2: Steam the broccoli for 4-6 minutes until tender-crisp. Remove from heat and set aside.
Step 3: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
Step 4: Slowly whisk in the milk, ensuring there are no lumps. Continue cooking until the sauce thickens and starts to simmer.
Step 5: Reduce the heat to low and gradually stir in the grated cheddar cheese until melted and smooth.
Step 6: Season the sauce with salt, pepper, and nutmeg. Gently fold the steamed broccoli into the cheese sauce until well coated.
Step 7: Serve immediately while the cheesy broccoli is warm and creamy.
Notes
Always grate your own cheese for the smoothest sauce. Pre-shredded cheese can make the sauce grainy.
