1.5 lbs small potatoes (Yukon Gold or red potatoes), scrubbed and diced into 1-inch cubes
14 oz smoked sausage (kielbasa or similar), sliced into 1/2-inch rounds
2 tbsp olive oil
1 packet (1 oz) ranch seasoning mix
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp salt (or to taste, accounting for ranch mix)
1/4 tsp black pepper
1.5 cups shredded cheddar cheese (or a cheddar-Monterey Jack blend)
Fresh parsley or chives, chopped (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or line it with parchment paper for easy cleanup.
Step 2: In a large mixing bowl, combine the diced potatoes and sliced smoked sausage.
Step 3: Drizzle the mixture with olive oil, then sprinkle with the ranch seasoning mix, garlic powder, onion powder, paprika, salt, and black pepper. Toss thoroughly until everything is evenly coated.
Step 4: Spread the seasoned potatoes and sausage in a single layer on the prepared baking sheet. Ensure there’s enough space between pieces for them to roast, not steam. If necessary, use two baking sheets.
Step 5: Roast for 20-25 minutes, stirring gently halfway through, until the potatoes are fork-tender and starting to turn golden brown, and the sausage is nicely browned.
Step 6: Remove the baking sheet from the oven. Evenly sprinkle the shredded cheese over the entire mixture. Return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly. For an extra golden top, you can briefly broil for 1-2 minutes, watching carefully to prevent burning.
Step 7: Carefully remove from the oven. Let it cool for a minute or two before serving hot, garnished with fresh parsley or chives if desired.
Notes
For extra crispy potatoes, ensure your baking sheet isn’t overcrowded; use two if needed. Don’t skip stirring halfway through cooking for even browning. Leftovers can be stored in an airtight container for up to 3-4 days and reheated in the microwave or oven.
