Rustic Cherry Almond Crumble

Ingredients

6 cups fresh or frozen pitted cherries
1/2 cup granulated sugar
2 tablespoons cornstarch
1/2 teaspoon almond extract
1 cup all-purpose flour
1 cup rolled oats
1/2 cup packed brown sugar
1/2 cup cold unsalted butter, cubed
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup sliced almonds

Instructions

Step 1: Preheat your oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish.
Step 2: In a large bowl, combine the pitted cherries, granulated sugar, cornstarch, and almond extract. Toss gently until the cherries are well coated.
Step 3: Transfer the cherry mixture into the prepared baking dish, spreading it out evenly.
Step 4: In another bowl, combine the flour, oats, brown sugar, cinnamon, and salt for the topping.
Step 5: Use your fingers or a pastry blender to work the cold butter into the flour mixture until it forms pea-sized crumbs.
Step 6: Stir in the sliced almonds and sprinkle the crumble mixture evenly over the cherries.
Step 7: Bake for 40-45 minutes, or until the fruit is bubbling and the topping is golden brown.
Step 8: Allow the crumble to cool for at least 15 minutes before serving to let the juices set.

Notes

If using frozen cherries, do not thaw before baking. You may need to add 5-10 minutes to the baking time.
