Instructions

Step 1: In a medium bowl or a sealable jar, combine the chia seeds, almond milk, maple syrup (or honey), vanilla extract, and a pinch of salt. Whisk vigorously for about 1 minute to ensure all ingredients are well combined and no chia seeds clump together at the bottom. This initial whisking is crucial to prevent lumps.
Step 2: Let the mixture sit for 5 minutes at room temperature, then whisk again thoroughly. Chia seeds can clump if not mixed properly early on. This second stir helps distribute them evenly and activate the gelling process.
Step 3: Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight. The longer it chills, the thicker and creamier the pudding will become. For best results, give it a stir after about 30 minutes of chilling, if you remember, to break up any remaining clumps.
Step 4: Once set, stir the chia pudding again before serving. If it’s too thick, add a splash more milk until you reach your desired consistency. If it’s too thin, next time you make chia pudding recipes, add a little more chia seeds.
