Ingredients
1/2 cup chia seeds
1.5 cups full-fat canned coconut milk (or any milk of choice)
2 tablespoons maple syrup or honey (adjust to taste)
1/2 teaspoon vanilla extract (optional)
Pinch of salt
Fresh berries for topping
Shredded coconut, nuts, or granola for topping (optional)
Instructions
Step 1: In a medium bowl or a large jar, combine the chia seeds, coconut milk, maple syrup (or honey), vanilla extract (if using), and a pinch of salt.
Step 2: Whisk or stir vigorously for about 1-2 minutes to ensure there are no clumps and the chia seeds are evenly distributed. This is crucial for preventing a lumpy pudding.
Step 3: Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight. For the best consistency, stir the mixture again after about 30-60 minutes of refrigeration to break up any clumps and redistribute the seeds.
Step 4: Before serving, give the chia pudding a good stir. If it’s too thick, you can add a splash more coconut milk or water to reach your desired consistency. If it’s too thin, let it sit for another hour or two.
Step 5: Divide the chia pudding into two serving bowls or jars. Top with fresh berries, shredded coconut, a sprinkle of granola, or your favorite nuts. Enjoy immediately!
Notes
This recipe is incredibly flexible! Feel free to adjust the sweetness, type of milk, and toppings to suit your preference. For a chocolate version, add 1-2 tablespoons of cocoa powder.
