2 tbsp olive oil

1 tbsp brown sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp dried oregano
1/4 tsp black pepper
1 tbsp fresh lemon juice
1 large red bell pepper, cored and chopped into 1-inch pieces
1 large green bell pepper, cored and chopped into 1-inch pieces
1 medium red onion, cut into wedges
1 medium zucchini, chopped into 1/2-inch half-moons
2 tbsp high-smoke-point oil (like avocado or grapeseed) for griddle
Fresh parsley or cilantro, chopped, for garnish (optional)

Instructions

Step 1: In a large bowl, combine the cut chicken thighs, 2 tablespoons olive oil, soy sauce, brown sugar, garlic powder, onion powder, smoked paprika, dried oregano, black pepper, and lemon juice. Toss well to ensure all chicken pieces are coated. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
Step 2: Preheat your Blackstone griddle to medium-high heat (approximately 400-450°F or 200-230°C). While the griddle heats, ensure your bell peppers, red onion, and zucchini are all chopped and ready.
Step 3: Once the griddle is hot, add 1 tablespoon of high-smoke-point oil to the surface and spread evenly. Carefully place the marinated chicken pieces in a single layer on the hot griddle. Avoid overcrowding; cook in batches if necessary to ensure a good sear.
Step 4: Cook the chicken for 3-4 minutes per side, or until beautifully browned and cooked through, reaching an internal temperature of 165°F (74°C). Remove the cooked chicken from the griddle and set aside.
Step 5: Add the remaining 1 tablespoon of high-smoke-point oil to the griddle. Add the chopped bell peppers, red onion, and zucchini. Sauté the vegetables for 5-7 minutes, stirring occasionally, until they are tender-crisp and slightly charred.
Step 6: Return the cooked chicken to the griddle with the vegetables. Toss everything together to combine and heat through for another 1-2 minutes. Taste and adjust seasoning if needed.
