Ingredients
2 cups shredded cooked chicken (rotisserie works great)
1 cup shredded Monterey Jack cheese
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon chili powder
12 small flour tortillas
Vegetable oil for frying
Salt to taste
Optional toppings: Sour cream, guacamole, salsa, shredded lettuce
Instructions
Step 1: In a large mixing bowl, combine the shredded chicken, Monterey Jack cheese, cumin, garlic powder, and chili powder. Mix well until the chicken is evenly coated with spices.
Step 2: Wrap the flour tortillas in a damp paper towel and microwave for 20-30 seconds until they are soft and pliable.
Step 3: Place about 2 tablespoons of the chicken mixture in a line down the center of each tortilla. Roll the tortilla tightly around the filling.
Step 4: Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully place 3-4 flautas in the pan, seam-side down.
Step 5: Fry for 2-3 minutes per side, turning with tongs, until the tortillas are golden brown and crispy on all sides.
Step 6: Remove the flautas from the oil and drain on a plate lined with paper towels. Sprinkle with a pinch of salt while still hot and serve immediately with your favorite toppings.
Notes
For a lighter version, spray with oil and air fry at 400°F for 8-10 minutes.
