1 tbsp sesame oil
2 tbsp vegetable oil (or other neutral oil)
1 lb boneless, skinless chicken breast or thighs, cut into 1/2-inch cubes
1 small onion, finely diced
2 cloves garlic, minced
1 cup frozen peas and carrots blend
2 large eggs, lightly beaten
3 tbsp soy sauce (low sodium preferred)
1 tbsp oyster sauce (optional, for extra depth)
1 tsp sugar
1/2 tsp white pepper
2 green onions, thinly sliced (for garnish)
Instructions
Step 1: Prepare your chicken by cutting it into small, uniform cubes. Season lightly with salt and pepper.
Step 2: In a small bowl, whisk together the soy sauce, oyster sauce (if using), sugar, and white pepper. Set aside. This is your flavorful sauce for the chicken fried rice recipe.
