Ingredients
1.5 lbs (680g) ground chicken (92-93% lean)
1/2 cup finely minced yellow onion (or grated and squeezed dry)
4 cloves garlic, minced
1/2 cup fresh flat-leaf parsley, finely chopped
1/4 cup fresh mint, finely chopped
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional)
1 tsp salt
1/2 tsp black pepper
1–2 tbsp olive oil (for cooking)
1.5 cups (360g) full-fat Greek yogurt
2 cloves garlic, finely minced
2 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
1/4 tsp salt (or to taste)
Instructions
Step 1: In a large mixing bowl, combine the ground chicken, finely minced onion, minced garlic, finely chopped fresh parsley, and finely chopped fresh mint.
Step 2: Add the ground cumin, ground coriander, smoked paprika, cayenne pepper (if using), salt, and black pepper.
Step 3: Gently mix all the ingredients together with your hands until just combined. Be careful not to overmix.
Step 4: Divide the mixture into 12-16 equal portions. Lightly wet your hands, then shape each portion into an elongated oval or sausage shape (about 3-4 inches long). Place on a parchment-lined baking sheet.
Step 5: Cover and refrigerate the shaped kofta for at least 30 minutes to help them firm up.
Step 6: Preheat your oven to 400°F (200°C) OR heat 1-2 tablespoons of olive oil in a large skillet over medium-high heat OR preheat your grill to medium-high.
Step 7: If baking: Arrange kofta on a baking sheet and bake for 18-25 minutes, flipping halfway, until golden and cooked through. If pan-frying: Place kofta in the hot skillet (in batches) and sear for 3-4 minutes per side until golden and cooked through. If grilling: Place kofta on oiled grill grates and grill for 3-5 minutes per side until charred and cooked through.
Step 8: While kofta cooks, prepare the garlic yogurt sauce. In a small bowl, combine the Greek yogurt, finely minced garlic, fresh lemon juice, extra virgin olive oil, and salt.
Step 9: Whisk until thoroughly combined and smooth. Taste and adjust seasoning as needed. Refrigerate until ready to serve.
Step 10: Serve the cooked chicken kofta hot, drizzled generously with the chilled garlic yogurt sauce, alongside your favorite sides.
Notes
For extra flavor, consider adding a pinch of sumac to the kofta mixture. If you don’t have fresh mint, you can substitute with a bit more parsley, though mint adds a unique freshness. Kofta can be frozen raw or cooked; thaw raw kofta before cooking or reheat cooked kofta from frozen at a lower temperature until warmed through.
