One-Pan Chicken Potato Bake

A comforting and easy one-pan chicken potato bake recipe featuring tender chicken thighs and crispy seasoned potatoes, perfect for a busy weeknight meal.

Ingredients

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1.5 lbs Yukon Gold or red potatoes, scrubbed and cut into 1-inch cubes
3 tablespoons olive oil
1 tablespoon Italian seasoning
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
1/2 cup shredded cheddar or mozzarella cheese (optional, for topping)
Fresh parsley or chives, chopped (for garnish, optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large, sturdy baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the cut chicken thighs and potato cubes. Drizzle with olive oil and sprinkle with Italian seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss everything together using your hands until the chicken and potatoes are evenly coated with the seasonings.
Step 3: Spread the seasoned chicken and potatoes in a single layer on the prepared baking sheet. Ensure there is enough space between the pieces to allow them to roast and crisp, not steam. If necessary, use two baking sheets.
Step 4: Bake for 25-30 minutes. Remove the pan from the oven and carefully stir or flip the chicken and potatoes to promote even browning and crisping.
Step 5: Return the pan to the oven and continue baking for another 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and the potatoes are fork-tender and golden brown. If using, sprinkle the shredded cheese over the chicken and potatoes during the last 5-10 minutes of baking until melted and bubbly.
Step 6: Once done, remove the pan from the oven and let the chicken potato bake rest for 5 minutes before serving. Garnish with fresh chopped parsley or chives, if desired.

Notes

For best results, do not overcrowd the baking sheet. If your pan is too full, divide the ingredients between two sheets to ensure everything crisps up nicely instead of steaming. Leftovers store well in an airtight container in the fridge for up to 3 days.
