Quick & Delicious Chicken Ramen Stir Fry

An incredibly fast and flavorful chicken ramen stir fry recipe that transforms instant ramen into a gourmet weeknight meal, packed with tender chicken, crisp vegetables, and a savory homemade sauce.

Ingredients

1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
1 tbsp soy sauce (for chicken marinade)
1 tsp cornstarch (for chicken marinade)
2 tbsp vegetable oil, divided
4 packs instant ramen noodles (discard seasoning packets)
2 cups broccoli florets
1 cup shredded carrots
1/2 cup chicken broth
1/4 cup soy sauce
2 tbsp oyster sauce (optional, but recommended)
1 tbsp honey (or brown sugar)
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp grated fresh ginger
2 cloves garlic, minced
Toasted sesame seeds, for garnish (optional)
Sliced green onions, for garnish (optional)

Instructions

Step 1: In a medium bowl, toss the chicken pieces with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Set aside.
Step 2: In a small bowl, whisk together the chicken broth, 1/4 cup soy sauce, oyster sauce (if using), honey, rice vinegar, sesame oil, grated ginger, and minced garlic until well combined. Set aside.
Step 3: Bring a pot of water to a boil. Add the ramen noodles (discarding seasoning packets) and cook according to package directions (usually 2-3 minutes) until just tender. Drain well and set aside.
Step 4: Heat 1 tablespoon of vegetable oil in a large wok or a large skillet over high heat until shimmering. Add the seasoned chicken pieces and spread them in a single layer. Cook for 3-4 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the wok and set aside.
Step 5: Add the remaining 1 tablespoon of vegetable oil to the hot wok. Add the broccoli florets and shredded carrots. Stir-fry for 3-5 minutes until the broccoli is bright green and tender-crisp.
Step 6: Return the cooked chicken to the wok with the vegetables. Add the drained ramen noodles and pour the prepared stir-fry sauce over everything. Toss constantly for 1-2 minutes, allowing the noodles and chicken to absorb the sauce and for the sauce to thicken slightly.
Step 7: Remove from heat. Garnish with toasted sesame seeds and sliced green onions, if desired. Serve your chicken ramen stir fry immediately.

Notes

Feel free to customize the vegetables based on what you have on hand. Bell peppers, snap peas, or mushrooms are great additions. For a spicier kick, add a pinch of red pepper flakes to the sauce.
