Ingredients
1.5 lbs small potatoes (Yukon Gold or red), cut into 1-inch cubes
2 large apples (Honeycrisp, Fuji, or Gala), cored and cut into 1-inch wedges
1 lb pre-cooked chicken sausage, sliced into ½-inch rounds
2 tbsp olive oil
1 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp salt
1/4 tsp black pepper
Fresh parsley, chopped (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with parchment paper.
Step 2: In a large bowl, combine the cubed potatoes, apple wedges, and sliced chicken sausage.
Step 3: Drizzle the mixture with olive oil, then sprinkle with dried thyme, dried rosemary, salt, and black pepper. Toss everything together until all ingredients are evenly coated.
Step 4: Spread the seasoned mixture in a single layer on the prepared baking sheet. Ensure not to overcrowd the pan; use a second sheet pan if necessary to allow for proper roasting and browning.
Step 5: Roast for 15 minutes. Remove the pan from the oven, stir the ingredients to promote even cooking, and return to the oven for another 15-20 minutes, or until the potatoes are tender, the apples are softened and slightly caramelized, and the sausage is lightly browned.
Step 6: Remove the Chicken Sausage, Apples & Potatoes Sheet Pan Dinner from the oven. Garnish with fresh chopped parsley, if desired, and serve immediately.
Notes
For best results, avoid overcrowding the sheet pan. If using raw chicken sausage, ensure it reaches an internal temperature of 165°F (74°C). You can add a drizzle of balsamic glaze or a sprinkle of fresh rosemary before serving for extra flavor.
