Ingredients
8 bone-in, skin-on chicken thighs (about 2.5–3 lbs)
1/4 cup honey
1/4 cup soy sauce (low sodium preferred)
2 tablespoons apple cider vinegar
4 cloves garlic, minced
1 tablespoon fresh ginger, grated (optional)
1 tablespoon olive oil
1/2 teaspoon black pepper
Salt to taste (use sparingly due to soy sauce)
2 tablespoons chopped fresh parsley or green onions, for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easier cleanup.
Step 2: Pat the chicken thighs thoroughly dry with paper towels. This is crucial for crispy skin. Season lightly with salt and pepper.
Step 3: In a medium bowl, whisk together the honey, soy sauce, apple cider vinegar, minced garlic, grated ginger (if using), and olive oil to create the marinade.
Step 4: Place the dried chicken thighs in a large bowl or a Ziploc bag. Pour about two-thirds of the honey garlic marinade over the chicken, ensuring each piece is well coated. Reserve the remaining one-third of the marinade for later glazing. Marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator.
Step 5: Arrange the marinated chicken thighs skin-side up on the prepared baking sheet, leaving some space between each piece.
Step 6: Bake for 20 minutes.
Step 7: Remove the baking sheet from the oven. Brush the chicken thighs generously with some of the reserved marinade. Return to the oven and continue baking for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy. For extra crispiness, you can broil for the last 2-3 minutes, watching carefully to prevent burning.
Step 8: Let the chicken rest on the baking sheet for 5-10 minutes before serving. This allows the juices to redistribute, ensuring moist chicken.
