Ingredients
2 lbs chicken wings (flats and drums separated)
2 tbsp brown sugar
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1/2 tsp cumin
1 tsp kosher salt
1 tsp black pepper
1 tbsp cornstarch (for extra crispiness)
Instructions
Step 1: Pat the chicken wings completely dry using paper towels to ensure the chicken wing dry rub for smoking adheres properly.
Step 2: In a small bowl, whisk together the brown sugar, paprika, garlic powder, onion powder, chili powder, cumin, salt, pepper, and cornstarch.
Step 3: Place the wings in a large bowl and toss with the chicken wing dry rub for smoking until every wing is evenly coated.
Step 4: Pre-heat your smoker to 225°F (107°C) using your choice of wood (apple or hickory works best).
Step 5: Arrange the wings on the smoker grate and smoke for approximately 60 minutes.
Step 6: Increase the temperature to 375°F (190°C) for the final 20-30 minutes to crisp up the skin seasoned with the chicken wing dry rub for smoking.
Step 7: Remove wings when the internal temperature reaches 165°F and let rest for 5 minutes before serving.
Notes
For maximum flavor, apply the rub and let the wings sit in the fridge uncovered for 2 hours before smoking.
