Ingredients
8 oz wide egg noodles
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1 cup chicken broth
1/2 cup grated Parmesan cheese (plus more for garnish)
1/4 cup fresh parsley, chopped (plus more for garnish)
Salt and black pepper to taste
1/2 tsp garlic powder
Instructions
Step 1: Cook the egg noodles according to package directions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the noodles and set aside.
Step 2: Pat chicken pieces dry and season with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 3-4 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
Step 3: Reduce heat to medium. Add butter to the same skillet, melting it and scraping up any browned bits. Add minced garlic and cook for 1 minute until fragrant. Stir in chicken broth and bring to a gentle simmer, allowing it to reduce slightly.
Step 4: Add the cooked egg noodles, cooked chicken, and chopped parsley to the skillet. Toss gently to coat. Stir in Parmesan cheese until melted and creamy. If the sauce is too thick, add a splash of reserved pasta water. Taste and adjust seasonings.
Step 5: Serve immediately, garnished with extra parsley or Parmesan cheese as desired.
Notes
For best results, do not overcook the noodles; they should be al dente. Freshly grated Parmesan cheese melts better and tastes richer than pre-grated varieties.
