1/4 cup maple syrup or honey
1 teaspoon vanilla extract

1–2 tablespoons milk (dairy or non-dairy), as needed for consistency
1/2 cup chocolate chips (dark, semi-sweet, or white)

Instructions

Step 1: Prepare the Chickpeas. Thoroughly rinse one 15-ounce can of chickpeas under cold running water. Drain them very well and then, using a paper towel, pat them as dry as possible. This step is crucial for removing any residual bean flavor and ensuring a smooth texture.
Step 2: Combine Wet Ingredients. In a food processor or high-speed blender, add the drained and dried chickpeas, 1/2 cup creamy natural nut butter (peanut, almond, or cashew work well), 1/4 cup maple syrup (or honey), 1 teaspoon vanilla extract, and 1/4 teaspoon salt.
Step 3: Blend Until Smooth. Process the mixture until it is completely smooth and creamy. This may take a few minutes, and you might need to stop and scrape down the sides of the bowl several times to ensure everything is incorporated. Continue blending until no chickpea lumps remain and the mixture resembles a thick batter.
Step 4: Adjust Consistency (if needed). If your Chickpea Cookie Dough is too thick or dry, add 1-2 tablespoons of milk (dairy or non-dairy) one spoonful at a time, blending after each addition, until you reach your desired cookie dough consistency. If it’s too thin, you can add 1-2 tablespoons of oat flour or almond flour to thicken it.
