Ingredients
1 (15-ounce) can chickpeas, rinsed and drained
1 large cucumber, diced
1 pint cherry tomatoes, halved
1/2 red onion, finely diced
2 ripe avocados, diced
4 ounces feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped (optional)
For the Dressing:
1/4 cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1 clove garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Instructions
Step 1: In a large mixing bowl, combine the rinsed and drained chickpeas, diced cucumber, halved cherry tomatoes, and finely diced red onion.
Step 2: In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and black pepper until well combined. Taste and adjust seasonings as needed.
Step 3: Pour the dressing over the chickpea and vegetable mixture. Toss gently to ensure all ingredients are evenly coated.
Step 4: Gently fold in the crumbled feta cheese, diced avocado, and fresh chopped parsley or dill. Be careful not to mash the avocado.
Step 5: For best flavor, cover the bowl and refrigerate for at least 15-30 minutes to allow the flavors to meld. Serve chilled.
Notes
For best results, consume fresh. If preparing ahead, add avocado just before serving to prevent browning. Store dressing separately to maintain crispness.
