Ingredients
2 large eggs
2 tablespoons chili oil or chili crisp (with sediment)
1/4 teaspoon sea salt
1 teaspoon chopped green onions
1/2 teaspoon toasted sesame seeds
Optional: 1 teaspoon soy sauce
Instructions
Step 1: Heat a medium non-stick skillet or cast-iron pan over medium heat for about 1 minute.
Step 2: Add 2 tablespoons of chili oil to the pan, making sure to include the crunchy bits from the bottom of the jar.
Step 3: Once the oil starts to sizzle, carefully crack the eggs into the pan, spaced slightly apart.
Step 4: Fry the eggs for 2-3 minutes. Use a spoon to occasionally baste the egg whites with the hot spicy oil to ensure they cook through while the edges get crispy.
Step 5: Remove the pan from the heat once the whites are set but the yolks are still runny. Sprinkle with salt, green onions, and sesame seeds.
Step 6: Slide the Chilli Oil Fried Eggs onto a plate or over a bowl of rice and serve immediately.
Notes
Adjust the heat by choosing a milder or hotter chili oil. For extra depth, add a splash of soy sauce at the very end.
