Ingredients
2 lbs Yukon Gold potatoes, peeled and cubed
1/2 cup heavy cream
1/4 cup unsalted butter
1/2 cup fresh chives, finely minced
2 cloves garlic, minced
1 tsp sea salt
1/2 tsp black pepper
Instructions
Step 1: Place the cubed potatoes in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until fork-tender.
Step 2: While the potatoes are cooking, melt the butter in a small saucepan over low heat and sauté the minced garlic for 1-2 minutes until fragrant.
Step 3: Stir the heavy cream into the garlic butter and keep warm on low heat; do not let it boil.
Step 4: Drain the potatoes and return them to the pot for 1 minute to allow excess steam to escape, ensuring a better texture for your chives recipe.
Step 5: Mash the potatoes until smooth, then slowly fold in the warm cream mixture and the fresh chives until fully incorporated.
Notes
For extra fluffiness, use a potato ricer instead of a traditional masher.
