1/2 cup fresh chives, finely chopped
2 cloves garlic, minced (about 1 teaspoon)
2 tablespoons unsalted butter or extra virgin olive oil

Instructions
Step 1: Prepare Your Chives. Begin by washing your fresh chives thoroughly under cool running water. Gently pat them dry with a clean kitchen towel or paper towels. Gather the chives into a neat bunch and finely chop them using a sharp knife. Aim for small, uniform pieces.
Step 2: Mince the Garlic. Peel your garlic cloves and mince them as finely as possible. A garlic press can also be used here for convenience. The goal is to get the garlic very small so it distributes evenly and cooks quickly without burning.
Step 3: Heat Your Fat. In a small skillet or saucepan, melt the unsalted butter or heat the olive oil over medium-low heat. You don’t want the fat to brown or smoke; just get it warm enough to infuse with the aromatics.
Step 4: Sauté the Garlic. Add the minced garlic to the warm butter or oil. Sauté for about 30 seconds to 1 minute, stirring constantly, until it becomes fragrant. Be careful not to let it brown, as burnt garlic can taste bitter.
Step 5: Add the Chives. Remove the skillet from the heat, or reduce the heat to very low. Stir in the finely chopped chives. The residual heat from the pan and the fat will gently warm the chives, releasing their essential oils without cooking them too much and dulling their vibrant color and flavor.
Step 6: Season to Perfection. Add a pinch of sea salt and freshly ground black pepper to taste. Stir everything together to combine. Taste and adjust seasoning as needed.
Step 7: Serve Immediately or Store. Your flavorful chive mixture is ready to use! Add it to your favorite dishes, or allow it to cool completely before transferring to an airtight container. It can be stored in the refrigerator for up to 3-4 days. For longer storage, you can freeze it in ice cube trays with a little extra oil.
Notes
For best results, use fresh chives. Dried chives can be substituted but will have a milder flavor. Adjust garlic and seasoning to your personal taste.
