Instructions
Step 1: In a large, microwave-safe mug (at least 12-14 oz capacity), whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, and salt. Make sure there are no lumps.
Step 2: Add the wet ingredients to the mug: milk, vegetable oil (or melted butter), and vanilla extract. Stir with a fork until just combined and smooth. Be careful not to overmix; a few small lumps are okay.
Step 3: If desired, stir in optional chocolate chips or chopped nuts.
Step 4: Microwave on high for 60-90 seconds. Cooking time can vary significantly based on your microwave’s wattage. Start with 60 seconds, then cook in 10-15 second intervals until the cake is set on top but still looks moist. The center may still be slightly gooey.
Step 5: Carefully remove the mug from the microwave (it will be hot!). Let it cool for a minute or two before digging in. Serve immediately with your favorite toppings like ice cream, whipped cream, or extra chocolate chips.
Notes
Microwave wattages vary, so watch your mug cake carefully to avoid overcooking. For extra decadence, add a square of chocolate to the center of the batter before microwaving for a molten chocolate core!
