Cranberry Brie Bites with Pecans and Thyme

An elegant, easy-to-make Christmas appetizer featuring flaky puff pastry, creamy melted brie, tart whole berry cranberry sauce, and crunchy toasted pecans, garnished with fresh thyme. Perfect for holiday gatherings!

1 package (17.3 ounces) frozen puff pastry, thawed
8 ounces brie cheese, rind on, cut into 1/2-inch to 3/4-inch cubes
1/2 cup whole berry cranberry sauce (not jellied)
1/4 cup chopped pecans
Fresh thyme sprigs, for garnish (optional)
Non-stick cooking spray

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly spray a 24-cup mini muffin tin with non-stick spray.
Step 2: On a lightly floured surface, unroll one sheet of thawed puff pastry. Using a 2.5 to 3-inch round cookie cutter, cut out 12 circles. Repeat with the second sheet of puff pastry to get a total of 24 circles. Gently re-roll any scraps if needed.
Step 3: Carefully press each puff pastry circle into the prepared mini muffin cups, forming a small cup.
Step 4: Place one cube of brie cheese into the center of each puff pastry cup.
Step 5: Top the brie with about 1 teaspoon of whole berry cranberry sauce.
Step 6: Sprinkle a few chopped pecans over the cranberry sauce in each cup.
Step 7: Bake for 18-22 minutes, or until the puff pastry is golden brown and puffed, and the brie is melted and bubbly.
Step 8: Remove from the oven and let cool in the muffin tin for 5 minutes before carefully transferring to a wire rack. Garnish with fresh thyme sprigs, if desired, and serve warm.

Notes

For best results, ensure puff pastry is thawed but still cold. Avoid overfilling the pastry cups. These bites can be assembled up to an hour ahead and refrigerated before baking, or baked and gently reheated.
