Ingredients
1 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
2 tsp vanilla extract
2 3/4 cups all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
1/3 cup granulated sugar (for coating)
2 tbsp ground cinnamon (for coating)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone mats.
Step 2: In a large bowl, cream together the softened butter, 3/4 cup granulated sugar, and brown sugar until light and fluffy.
Step 3: Beat in the egg and vanilla extract until well combined.
Step 4: In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
Step 6: In a small bowl, combine the 1/3 cup sugar and 2 tablespoons of cinnamon for the coating.
Step 7: Scoop 1.5 tablespoon-sized portions of dough, roll into balls, and roll generously in the cinnamon-sugar mixture.
Step 8: Place on the prepared baking sheets about 2 inches apart and bake for 8-10 minutes.
Step 9: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Do not overbake! These cookies stay soft if you remove them from the oven while the centers still look slightly moist.
